Trendy of fusion koken is meestal niet aan mij besteed: ik vind drinken uit lege jampotjes terwijl je garnalen in chocolade-saus eet met Thaise Nam Pla met een "Carpaccio" van paddestoelen geen genot. Ook vind ik dat het menu regelmatig moet veranderen. Een restaurant met hetzelfde menu jaar in, jaar uit, zonder rekening te houden met de seizoenen werkt met verveelde, onge�nspireerde koks. Tot slot, een restaurant moet niet alles willen kunnen. Een manusje van alles is een meester van niets, en nergens is dat meer waar dan in de keuken.
