In this thesis case studies of four farms over a period of four to ten years are used to examine the extent of financial difficulties during the conversion period to ecological agriculture, and the results are placed in the context of other studies and models of the conversion process. This book presents the results of a comparison of the quality of food products and raw materials, such as vegetables, fruits and honey, produced in organic and conventional farming systems.
