In the last few years, the Latin-American seeds have gained increased importance (also due to the increased demand for gluten-free foods). Worldwide demand for Latin-American seeds and grains has risen in a high proportion. In parallel, seeds and grains' research from this region in all relevant fields has been intensified. Latin-American Seeds: Agronomic, Processing and Health Aspects summarizes the recent research on Latin-American crops regarding agronomic and botanical characteristics, composition, structure, use, production, technology, and impact on human health. Latin-American cultivars studied here are included in the groups of cereals, pseudo-cereals, oilseeds, and legumes that are used in a great variety of innovative and traditional foods. The main crops that are covered in this book are Latin-American maize (Zea mays), amaranth (Amaranthus spp), quinoa (Chenopodium spp), kañiwa (Chenopodium pallidicaule), chia (Salvia hispanica), sacha inchi (Plukenetia volubilis) and legumes such as black turtle and common beans (Phaseolus vulgaris) and tarwi (Lupinus mutabilis). Key Features: Contains updated information about recent research works on Latin-American crops Includes a variety of Latin-American plant species that are used in a great variety of innovative and traditional foods Addresses a wide range of topics related to agronomy, plant physiology, and nutritional and technological properties, processing, fractionation and development of new products for human health

Legumes can act as good sources of nutrients, especially for those who are suffering from protein related nutritional deficiency. Chickpea (Cicer arietinum) and cowpea (Vigna unguiculata) are annual legumes grown throughout the world as food and feed. The presence of specific nutrients with many health benefits makes them a valuable food commodity. Chickpea and Cowpea: Nutritional Profile, Processing, Health Prospects and Commercial Uses explores the status of chickpea and cowpea in terms of their production, nutritional composition, processing mediated changes, and methods to remove antinutrients, bioactive peptides and their related health benefits. This book also demonstrates the key features of chickpea and cowpea which will make them an ideal substrate to be processed at a commercial scale. It covers all the aspects of latest research based on chickpea and cowpea. Features - Discusses information related to biochemistry of chickpea and cowpea components - Highlights comprehensive and meaningful information related to physical and functional properties - Explains processing mediated changes in nutritional profile of chickpea and cowpea - Provides latest scientific facts related to chickpea and cowpea starch - Explores various bioactive components and related health benefits - Demonstrates storage conditions for chickpea and cowpea In depth information is presented regarding various nutrient components and health benefits of chickpea and cowpea, which will provide meaningful information for product formulation. This book covers all aspects of recent research about the chickpea and cowpea while unravelling the hidden industrial potential of chickpea and cowpea.

The Animal Production International Seminar (APIS) is the first international conference held by the Faculty of Animal Science, Universitas Brawijaya. APIS was held for the first time in 2010 and was repeated every three years. In 2022, the 5th APIS was organized as an online meeting. The Faculty of Animal Science, Universitas Brawijaya, is optimistic that the results of the 5th APIS will just be as successful as the 4th APIS in 2019. The theme of 5th APIS was "Developing Modern Livestock Production in Tropical Countries". The 5th APIS discussed matters related to strategies for developing modern livestock production in several tropical countries. The participants of 5th APIS, including keynote speakers and invited speakers, are from various countries (tropical and sub-tropical). These proceedings present the selected papers from the 5th APIS conference.
