RANI POLAK, MD, is the founder and director of the Center for Healthy Cooking at Hadassah University Hospital in Jerusalem. A Le Cordon Bleu-educated chef, Dr. Polak received the 2005 Hebrew University Kaye Innovation Award for the healthy cooking workshops he designed for people with special dietary needs. He is a member of the Board of Directors of the Israeli Forum for the Prevention of Cardiovascular Disease, has worked with the Israel Institute for Integrated Medicine, and is currently a lecturer at both the Hebrew University's School of Nutritional Sciences and the School of Culinary Arts, Hadassah College.

VIOLA GOREN has studied cooking and baking at leading culinary institutions around the world. She graduated from The California Culinary Academy in San Francisco, and studied in several European institutions, including the Ewald Susan Notter School of Confectionery in Switzerland, The Callebaut Chocolate Academy in Belgium, and Fabbri & Fruibel in Italy. Her classroom training is complemented with hands-on experience in the pastry departments of leading bakeries and hotels. She prepared pies, pastries, cakes, and breads at the famed La Brea Bakery in Los Angeles, California, and prepared diverse desserts at The Regent Beverly Wilshire and the Hilton Tel Aviv. For more than a decade, Viola owned Sweet Dream, a popular Tel Aviv-based bakery that supplied baked goods to dozens of cafes and restaurants. Today, she is the owner of Viola Cafés, and teaches aspiring pastry-makers from all walks of life at the Estela Culinary School.

JORDAN D. BROWN has written award-winning books, articles, and websites for children, teachers, and parents. His clients include Scholastic, Sesame Workshop, TIME for Kids, and Thirteen/WNET. His nonfiction work includes Robo World, a biography of a robot designer (Joseph Henry Press, 2005); his children's fiction includes Just Kidding! (2001) and Animal E.R. (1999). Brown has written science articles, games, and humorous songs about astronomy, paleontology, marine biology, and much more for the American Museum of Natural History's kids website, OLogy.
