Excerpt from Twenty-Sixth Annual Report of the Bureau of Animal Industry for the Year 1909 Investigations made by the Bureau show that in order to protect the health of consumers there is great need for the supervision and inspection of dairy products and of the animals from which they are obtained. The danger Of contracting disease from such products is much greater than from meat, Since milk, cream, and butter are almost universally used and are usually consumed in the raw state. Scientific experiments by the Bureau and by other investigators have demonstrated that the germs of tuberculosis and typhoid fever are frequently conveyed through dairy products, and that these germs may remain alive and virulent in milk beyond the time within which it is usually consumed, and in butter for several months. Excerpt from Twenty-Seventh Annual Report of the Bureau of Animal Industry: For the Year 1910 The work of the Bureau of Animal Industry during the fiscal year ended June 30, 1910, consisted, as heretofore, of the meat inspection, the impaction of animals for export, the inspection and quarantine of imported animals, the eradication of contagious and infectious diseases of live stock, the scientific investigation of such diseases, investigations in the breeding and feeding of live stock and poultry, and work relating to the dairy industry. The employees in the service of the bureau on July 1, 1910, num bered as compared with a year before. Of the former number were engaged in meat inspection or work pertaining thereto, as compared with on July 1, 1909.
