In addition processing has provided a market for some veg etables grown exclusively for this purpose. In these roles, the processing industry has added appreciably to market stability, an important factor in vegetable production. Vegetable processing in the Southeastern States is not new, but the total volume processed is small compared with other areas, such as the Pacific Coast or Midwest.
