Peptones, which are probably mixtures of polypeptides, form copper salts that do not yield their copper as hydrate when boiled with a slight excess of alkali. Pep tones dissolve more copper hydrate in the presence of alkali than in its absence. It is possible to base a method for the study of ferment action upon the foregoing facts.
