Nitrite and Nitrate in Human Health and Disease delivers a comprehensive review of nitrite and nitrate biology, from basic biochemistry to the complex physiology and metabolism of these two naturally occurring molecules in the human body. Well-organized and well referenced chapters cover the rich history of nitrite and nitrate, sources of exposure, and the physiological effects when consumed through foods containing nitrite and nitrate. The chapters are written by leading experts, all of whom share their research and perspectives in order to help define the context for benefits vs. any potential risks associated with nitrite and nitrate use, either through dietary ingestion or therapeutic dosing. This diverse collection of authors includes vascular biologists, physiologists, physicians, epidemiologists, cancer biologists, registered dieticians, chemists, and public health experts from five countries in both academia and government. Nitrite and Nitrate in Human Health and Disease provides a balanced view of nitric oxide biochemistry, and nitrite and nitrate biochemistry in physiology and in the food sciences.

Despite increasing knowledge of human nutrition, the dietary contribution to cancer remains a troubling question. Carcinogens and Anticarcinogens assembles the best available information on the magnitude of potential cancer riskâ€"and potential anticarcinogenic effectâ€"from naturally occurring chemicals compared with risk from synthetic chemical constituents. The committee draws important conclusions about diet and cancer, including the carcinogenic role of excess calories and fat, the anticarcinogenic benefit of fiber and other substances, and the impact of food additive regulation. The book offers recommendations for epidemiological and diet research. Carcinogens and Anticarcinogens provides a readable overview of issues and addresses critical questions: Does diet contribute to an appreciable proportion of human cancer? Are there significant interactions between carcinogens and anticarcinogens in the diet? The volume discusses the mechanisms of carcinogenic and anticarcinogenic properties and considers whether techniques used to evaluate the carcinogenic potential of synthetics can be used with naturally occurring chemicals. The committee provides criteria for prioritizing the vast number of substances that need to be tested. Carcinogens and Anticarcinogens clarifies the issues and sets the direction for further investigations into diet and cancer. This volume will be of interest to anyone involved in food and health issues: policymakers, regulators, researchers, nutrition professionals, and health advocates.

Underwood's Pathology (formerly General and Systematic Pathology) is an internationally popular and highly acclaimed textbook, written and designed principally for students of medicine and the related health sciences. Pathology is presented in the context of modern cellular and molecular biology and contemporary clinical practice. After a clear introduction to basic principles, it provides comprehensive coverage of disease mechanisms and the pathology of specific disorders ordered by body system. An unrivalled collection of clinical photographs, histopathology images and graphics complement the clear, concise text. For this seventh edition, the entire book has been revised and updated. Well liked features to assist problem-based learning – including body diagrams annotated with signs, symptoms and diseases and a separate index of common clinical problems – have been retained and refreshed. The advent of whole genome sequencing and increased knowledge of the genetics of disease has been recognised by updated sections in many chapters. Download the enhanced eBook version (from studentconsult.com) for anytime access to the complete contents plus bonus learning materials, including: - clinical case studies – to help apply essential principles to modern practice - the fully revised, interactive self-assessment section with over 200 questions and answers – to check your understanding and aid exam preparation - especially produced video and podcast tutorials – to further explain and bring to life key topics - bonus pathology crosswords – to recall key words and topics in a fun and interactive way This all combines to make Underwood's an unsurpassed learning package in this fascinating and most central medical specialty. From reviews of previous editions: "...it truly is an outstanding textbook...highly recommended" Histopathology "...no doubt it will remain a bestseller – excellent value for undergraduates" Journal of Clinical Pathology "A book of this kind deserves a wide readership" Modern Pathology ".. the definitive textbook of pathology...expands on previous success and cements its position as the market leader for undergraduate pathology" The Bulletin A prize winner: Previous editions have won First Prize in the Medical Writers Group of the Society of Authors Awards, the British Book Design and Production Awards and the British Medical Association Student Textbook Award.

This book provides for the first time a single comprehensive source of information on the analytical chemistry of nicotine and related alkaloids. The editors have brought together scientists from academia and the tobacco industry to describe the state-of-the-art of the chemistry and analytical methods for measurement of nicotine. Both the scope and detail of the book are impressive. Chapters describe the history, pharmacology and toxicology of nicotine, the biosynthesis of nicotine and other alkaloids in the tobacco plant, the general chemistry of nicotine and the analytical methodologies that have been used to measure nicotine and related alkaloids in biological specimens, in tobacco and pharmaceutical products and in tobacco smoke. There is also a comprehensive review of the chemistry and toxicology of nicotine-derived nitrosamines, an important class of tobacco carcinogens.

The material presented in this book deals with basic mechanisms of free radical reactions in autoxidation processes and anitoxidant suppression of autoxidation of foods, biochemical models and biologi cal systems. Autoxidation in foods and corresponding biological effects are usually approached separately although recent mechanistic developments in the biochemistry and free radical chemistry of per oxides and their precursors tend to bring these two fields closer. Apparent ability of antioxidants in diets to reduce the inci dence of cancer has resulted in scrutiny of autoxidized products and their precursors as possibly toxic, mutagenic and carcinogenic agents. Mechanisms of any of these effects have been barely ad dressed. Yet we know now that free radicals, as esoteric as they were only a few decades ago, are being discovered in foods, biochem ical and biological systems and do play a role in the above-mentioned causalities. The purpose of the Workshop and the resulting book was to give a unifying approach towards study of beneficial and deleterious effects of autoxidation, based on rigorous scientific considerations. It is our hope that the material presented in this book will not only provide a review of the "state of the art" of autoxidation and anti oxidants, but also reflect the interaction which occurred during the Workshop between workers using model sytems, and food and biological systems.
