I have been induced to add to the innumerable com pany Of books from the fact that there seemed to be a want for a work which, besides furnishing statistical and historical matter relative to the coffee-plant, should give the reader a thorough knowledge of the characteristics of the world's coffee supply, and the mode of preserving and preparing the coffee-bean so as to best secure all those qualities which make coffee the favorite beverage with most Of the civilized nations of the earth. My reliance has been chiefly upon twenty years' experience as a dealer, and such in formation as was to be gathered from a trip around the world. I have to acknowledge my indebtedness to many books for facts re garding coffee culture, and historical matter relating thereto, and also to a large circle of business acquaintances for valuable statis tical information. To mention them specifically is hardly pos sible, and would be of little interest to the general reader. It is, however, but just that I should here recognize the many courtesies. Excerpt from Coffee: Production, Trade, and Consumption by Countries The different co ee producing countiies can be classified into four general classes as regards increase or decrease in production: (1) Brazil, Where production has increased very rapidly and has more than kept pace With the increase in consumption; (2) Mexico, Central America, Venezuela, the Guianas, Colombia, Ecuador, Peru, and the West Indies, where the production has gradually increased until recently, but in late years has remained stationary owing to the limited area suitable for coffee culture and to the great increase in production in Brazil; (3) Africa and Arabia, where the area and modes Of cultivation and transportation are limited, and where production, having passed through various phases, now remains nearly stationary; (4) Asia (excepting Arabia), which includes the Dutch and British East Indies, and the Philippine Islands, where co mee was early grown. And at an early date controlled the world's markets, but which can not at the present time compete with that grown in newer territories and in late years Shows a marked decrease in production.
