Food-borne disease remains a major public health challenge in Africa and Asia. Most of the foods that carry the highest pathogen risk are produced by smallholder farmers, marketed through the informal sector, and sold in wet markets. Given the significant role of informal markets in African and Asian food systems, attention is invested in understanding (1) how the people that participate in informal markets are exposed to risk, and (2) how they manage risk. We conduct a participatory risk analysis with a gender lens in 20 livestock and fish value chains to study whether gender-based differences influence risk of food-borne disease. We find that socially constructed gender roles are more important determinants of health risk than biological differences between men and women. Variations in risk exposure between men and women are mainly due to gender-based differences in occupational exposure, and secondarily to differences in consumption patterns. Women are important but under-recognized risk managers in the realms of food production, processing, selling, preparation, and consumption. Understanding the influence of gender on risk exposure and management is essential for improving food safety in informal markets.

Food losses are a major concern and occur in most fish distribution chains worldwide. Not only do losses constitute lost income to fishers, processors, and traders, but they also contribute to food insecurity. Progress has been made in identifying the direct causes of fish losses and quantifying the magnitude of the loss. However, loss reduction strategies have tended to focus on technological solutions and hence have overlooked the relevance of socio-economic factors, including gender relations, that influence the functioning of the fisheries value chain. This document provides guidance on integrating gender concerns into food loss interventions within the fish value chains. It describes the different steps to understand the key components of a gender-sensitive food loss value chain analysis. In particular, it recommends highlighting the dynamics and factors that influence women’s and men’s natural social disposition and participation in fisheries activities according to dominant assigned gender roles. While addressing the existing knowledge gaps and contributing to the development of an approach tailored to African small-scale fish value chains, this document also provides introductory information on the application of the FAO Gender-Responsive Fish Loss Assessment Methodology (GRFLAM).

Animal products are vital components of the diets and livelihoods of people across sub-Saharan Africa. They are frequently traded in local, unregulated markets and this can pose significant health risks. This volume presents an accessible overview of these issues in the context of food safety, zoonoses and public health, while at the same time maintaining fair and equitable livelihoods for poorer people across the continent. The book includes a review of the key issues and 25 case studies of the meat, milk, egg and fish food sectors drawn from a wide range of countries in East, West and Southern Africa, as part of the "Safe Food, Fair Food" project. It describes a realistic analysis of food safety risk by developing a methodology of 'participatory food safety risk assessment', involving small-scale producers and consumers in the process of data collection in a data-poor environment often found in developing countries. This approach aims to ensure market access for poor producers, while adopting a realistic and pragmatic strategy for reducing the risk of food-borne diseases for consumers.

Drawing on studies from Africa, Asia and South America, this book provides empirical evidence and conceptual explorations of the gendered dimensions of food security. It investigates how food security and gender inequity are conceptualized within interventions, assesses the impacts and outcomes of gender-responsive programs on food security and gender equity and addresses diverse approaches to gender research and practice that range from descriptive and analytical to strategic and transformative. The chapters draw on diverse theoretical perspectives, including transformative learning, feminist theory, deliberative democracy and technology adoption. As a result, they add important conceptual and empirical material to a growing literature on the challenges of gender equity in agricultural production. A unique feature of this book is the integration of both analytic and transformative approaches to understanding gender and food security. The analytic material shows how food security interventions enable women and men to meet the long-term nutritional needs of their households, and to enhance their economic position. The transformative chapters also document efforts to build durable and equitable relationships between men and women, addressing underlying social, cultural and economic causes of gender inequality. Taken together, these combined approaches enable women and men to reflect on gendered divisions of labor and resources related to food, and to reshape these divisions in ways which benefit families and communities. "In rural societies, where local culture and traditions are still very vibrant, responsibilities and tasks are often assigned to women and men on the basis of traditional gender roles, defined as those behaviours and responsibilities that a society considers appropriate for men, women, boys and girls. These roles change over time, have different characteristics in every local context and are shaped by ideological, religious, cultural, ethnic and economic factors. They are a key determinant of the distribution of resources and responsibilities between men and women (FAO, 2010b). In many cases gender roles are biased and favour certain social constituencies at the expense of others. Rural women, for instance, face serious obstacles more regularly than men, since traditional structures and perceptions tend to prevent them from obtaining the necessary tools to reach their full potential in the agricultural sector. In fact, despite their major involvement in and contribution to livestock management, women tend to have limited access to resources, extension services and less participation in decision making compared to their male counterparts (FAO, 2011a).
