Billings exploded when the railroad arrived, and good food was here to stay. Montana Avenue anchored the first establishments serving oysters, chop suey and steaks. Modern comfort arrived with the Northern Hotel and never left. Locals sipped, savored and swung at the Skyline, Bella Vista, Elmo and Windmill Supper Clubs from the 1930s to the 1960s. Entrepreneurs debuted the Level 3 Tea Room, La Toque, Bruno's and New Moon Cafe. Beef still reigns at the Rex, Jake's and Bistecca at the Granary. Writer Stella Fong testifies why names like Yegen, McCormick, Schaer and Honaker have persisted throughout Billings' culinary history.

The views surrounding Bend don't exactly conjure notions of traditional farmland. Snowy mountains frame open vistas dotted with gnarled juniper trees and sagebrush. By day, the landscape is blanketed under a blazing sun, while cold nights bring relief beneath bright stars. Despite these extremes, agriculture thrives, thanks to the hard work of dedicated farmers and ranchers. Irrigated fields support bountiful crops at Fields Farm and Mahonia Gardens. Farmers' markets, most notably at NorthWest Crossing, bustle with people buying local produce, dairy, eggs, meat and honey. Visit places like the Great American Egg to learn about the business of raising chickens and Jackson's Corner for a delicious sample of what eating local tastes like. Author Sara Rishforth goes behind the scenes to present the story of the local farm-to-table movement.

"Pure food" became the rallying cry among a divergent group of campaigners who lobbied Congress for a law regulating foods and drugs. James Harvey Young reveals the complex and pluralistic nature not only of that crusade but also of the broader Progressive movement of which it was a significant strand. In the vivid style familiar to readers of his earlier works, The Toadstool Millionaires and The Medical Messiahs, Young sets the pure food movement in the context of changing technology and medical theory and describes pioneering laws to control imported drugs and domestic oleomargarine. He explains controversy within the pure food coalition, showing how farming and business groups sought competitive commercial advantage, while consumer advocates wished to promote commercial integrity and advance public health. The author focuses on how the public became increasingly fearful of hazards in adulterated foods and narcotic nostrums and how Congress finally achieved the compromises necessary to pass the Food and Drugs Act and the meat inspection law of 1906. Originally published in 1989. The Princeton Legacy Library uses the latest print-on-demand technology to again make available previously out-of-print books from the distinguished backlist of Princeton University Press.
