Excerpt from Edible and Poisonous Mushrooms: A Descriptive Handbook to Accompany the Author's Colored Chart of Edible and Poisonous Mushrooms The popular and widespread interest in mushrooms of all kinds is almost phenomenal. This is due to their beauty of form and color and the supposed mystery surrounding their origin and growth, as well as to the use of certain kinds for food. Their nutritive value is not great, being about equal to that of cabbage, but they afford variety in flavor and add greatly to the relish for other foods. Mushroom eating is much more common in Europe than in this country. The struggle for existence is greater there, and the edible and poisonous varieties are better known by all classes of people. In China, it is almost impossible for a botanist to get specimens on account of the thorough manner in which all wild food is collected by the natives. Excerpt from Some Edible and Poisonous Fungi In the present paper an attempt is made to present, in as Simple a manner as the subject permits, the characteristics of a few of our most common fungi, together with notes on poisonous species which might be mistaken for the edible by those who have not studied fungi. It may be called a first lesson in distinguishing edible and poisonous fungi, and is not intended as a guide to those who are to a certain extent already familiar with the subject, but merely as a primer for those who do not recognize even our commonest species, but who desire to enroll themselves among the increasing ranks of fungus eat ers, or, to use a rather high-sounding word, mycophagists. Excerpt from Student's Hand-Book of Mushrooms of America Edible and Poisonous, Vol. 2 Twelve Edible Mushrooms of the U. Appeared in the annual report of the Department of Agriculture for 1885. This was followed by others to the number of five, and as the demand for these reports increased, reprints were made and issued, by order of the Secretary of Agriculture, in pamphlet form, under the general title of Food Products. Numerous editions of these reprints were issued by the Department up to 1894. During the year 1894, and the first half of 1895, of these reports were sent out by the Department, and the supply was exhausted. They have been out of print for more than two years. It is in view of this fact, and in response to a great and constant demand for these publications, that I have undertaken to publish a series of five pamphlets on the edible and poisonous mushrooms of the United States, which shall embody the substance of the five pamphlets on Food Products above alluded to, supplemented by new matter relating to classification, general and specific, analytical tables of standard authors, and a continuation of the chapters on structure, etc. Additional plates, representing leading types of edible and poisonous mushrooms, will also be inserted in each number. In the compilation and extension of this work I have the assistance of my daughter, Miss A. Robena Taylor, who has given considerable attention to the study of fungi, and who has been my faithful coadjutor in the work of collecting specimens, etc., for a number of years. For valuable suggestions as to structural characteristics and methods of classification I am especially indebted to Prof. Chas. H. Peck, of Albany, New York, Dr. M. C. Cooke, of England, and Prof. P. A. Saccardo, of Italy. About the Publisher Forgotten Books publishes hundreds of thousands of rare and classic books.
